KLASIFIKACE JATEČNÉHO SKOTU

Byla sledována aplikace systému SEUROP u jatečného skotu za rok 2003 až 2004 na vzorku 29 990 kusů. Pozornost byla zaměřena na jednotlivé kategorie, jejich početní stavy, průměrnou jatečnou hmotnost a její vztah ke zmasilosti a protučnělosti v průběhu sledovaného období. Průměrná jatečná hmotnost celého souboru byla 319,6 kg a je o 23-29 kg vyšší než celorepublikový průměr. Ve sledovaném vzorku byly zastoupeny nejvíce krávy, což odpovídá probíhající restrukturalizaci chovu skotu v České republice, kdy se významně snižuje početní stav dojených krav. U všech sledovaných kategorií jatečného skotu převažuje zatřídění do obchodních tříd R2 a R3. Mezi jednotlivými kategoriemi podle pohlaví, věku a hmotnosti jsou doporučeny i cenové rozdíly dle aktuální cenové masky, čímž je vyvíjen tlak na chovatele, aby chovali zvířata s vyšším podílem libové svaloviny.

Classification of the slaughter cattle

In the frame of this project, the application of the SEUROP system for slaughter cattle in 2003 and 2004 years was investigated. The 29 990 heads were examined. The attention was laid on the particular classis, their quantity, average slaughter weight and its relationship to the fleshed and over-fat during monitored period. The average slaughter weight of the whole population was 319.6 kg, what is 23-29 kg higher then republic average value. The caws create main part of the population, what corresponds with the restructuring of the Czech Republic breeds, when the quantity of the milk cows is significantly reduced. The classification to the commercial classes R2 and R3 predominate in the all monitored categories of the slaughter cattle. Among investigated categories according sex, ages and weight are recommended the price differences by the actual price mask, which creates pressure on the breeders to breed animals with the higher lean meat share.
